Turducken.
A Turducken is definitely a Cajun Invention. It is a debonned chicken
stuffed with various choices of meats, seafood and / or spices and then
inserted into a debonned duck which it is in turn inserted into a partially
debonned turkey. It feeds 18 - 25 people depending on the group. .
How to prepare it:

BEER BATTER
1 1/3 c All-purpose flour
1 t Salt
1/3 t Pepper
1 T Oil
2 Egg yolks
3/4 c Beer
Mix the flour, salt, pepper, oil and yolks together. Gradually mix in the
beer. Sample along the way (beer that is). Refrigerate the batter 3 hours
before using.
Dip fish, seafood or sliced onions in batter. Deep-fry in 375f oil until
golden brown.
You may also mix in 1/2 of a finely minced jalapeno pepper, or a whole one
if you prefer. |
